On many (but not all) pages, "Sidebar Appearance" is set to "Hide sidebar selected above". I change this to "Show Sidebar" and update the page. When I come back, it's set back to "Hide sidebar selected above". It won't stay, and as a result, the default sidebar doesn't display.

Hmm. This sounds strange. Does it happen right from the start when using the theme? Or after installing/updating something like plugins?
Anyway, please try to create a new page and copy the content from the one that does not work and test it again. See if the new page can help.
