I have just noticed that on mobile and iPad sometimes my header jumps upon load. If I click through to my contact page from the home page for example, the header briefly appears bigger than it is, then jumps to the correct size. This usually only happens on the initial load or when I use incognito mode. Once the page is cached in the browser it doesn’t tend to happen.

It is just when the theme trying to check and calculate the proper display size of elements on different viewports which is normal. As you mentioned, after it was cached, it should not happen again.
