I can't find the Journal page to add to the main menu. All I can add are the scattered Posts but can't seem to find the journal option so I can have them all in one place like in the demo website.
The "Journal" page you see on the demo site is actually the renamed "Blog" page. If you open the Blog page on your site, you should see all of your blog posts.
I see the posts in WP Dashboard but I can't link them to any page from the menu. I attached images with what I see when I look for the Blog, there is only a option for a sample page and no blog, only the scattered posts.

Please try this:
1. Go to "Pages > Add New" and create a new page named "Blog".
2. Go to "Settings > Reading" and select "Blog" for the "Posts page" option (screenshot: https://share.getcloudapp.com/E0uqY9oo ) then save.
3. Go to "Appearance > Menus" and add that Blog page to your main menu.
Now when you open the Blog page on the front-end, you should see all the blog posts show up. Let me know if this helps.
