Sorry but I am not sure about the server's sytem administration or where to find all the system logs. I would suggest you need some server admins to help you check this kind of issue.

It's very strange. It looks like all of the theme files were replaced again and again with the corrupted ones...
Not sure if there's any auto backup and restore functions enabled somehow on your end? Could you ask your server admin about this?

Honestly, I am afraid I am not sure why the files have been replaced by the corrupted ones again and again. I have never seen such issue before.
Did you always get the problem with only the "assets.php" file?
Could you check if there possibly is some server log that recorded the file activities and which processes cause the issue?
