Hmm. Sorry, but I am not sure I understand it correctly. Did you mean you are trying to add more portfolio categories and want them to display on the front-end?
If so, you can add more categories using the "Portfolio > Portfolio Categories" menu on the back-end. And to select what categories you want them to show up, please go to "Appearance > Customize > Theme Settings > Portfolio Settings".
You can add more images to a portfolio item by opening its edit screen on the back-end, and click the "Add to gallery" button. Please see this screenshot: https://cl.ly/0666192342f8
