The 'category image' you mentioned is actually a portfolio item's featured image, not the category.
The portfolio categories will only display as text links on the right-hand side of the portfolio items (as you see on the homepage of the demo site).
When each portfolio item is clicked, you will see its own single page that shows content and images or videos (it depends on the item format you choose on the back end).
You can manage the portfolio categories using the 'Portfolio > Portfolio Categories' menu on the back end.
You can manage the portfolio items using the 'Portfolio > All Portfolio Items' menu on the back end (you can upload their featured image on the edit screen).
So, back to your question, I am afraid the image content on the portfolio single page do not have the same title display as the portfolio items. But, you can enter the caption for each image, and it will display right below the image.
