I just purchased your theme and so far i'm happy with it, good job!
I've got a feature request: It would be nice to be able to show some additional content (text) in the caroussel in which the images of my portfolio item are being displayed. However i can either choose now between 'video' or 'image'. If i add content to the portfolio item the common way it will end up on top of my images (and i also want them to be displayed as a caroussel because thats a really nice feature). Can you add a feature so i can add my text blocks and contact form somewhere next to my gallery?

I can also try to develop it myself (using a child theme) but i was wondering if i should take the effort because if such a feature is going to be implemented in the near future i won't go trough all the hassle.
Is there also a way to make single portfolio posts being displayed as a carrousel instead of images being displayed beneath each other?
Unfortunately, there is no option for that out of the box. The theme by default only displays the portfolio images (on single pages) vertically. I am afraid you would also need to customize the theme to change that.
