I am sorry for the confusion, but that setting has no effect on the uploaded portfolio gallery (it is shown automatically by the OptionTree plugin that the theme uses).
Every image you put into the gallery of a portfolio item will only be displayed vertically. Just like what you see on the demo site: http://themes.uxbarn.com/wp/nakamura/portfolio/volume-8-magazine/ . Then visitors can click on each image to see its full size on the lightbox (you can also disable the lightbox by going to "Appearance > Customize > Portfolio Options.")
I will try to find a way to completely hide that unused setting in the future. Sorry again for the confusion.

Every time I try to change the gallery settings to the setting show in bug.jpg it reverts back to bug2.jpg setting as if nothing has changed.
